Easy Pan Seared Cod Recipe

Y’all are not going to believe how super easy this recipe is.

I had picked up some cod fillets from the seafood counter a few days ago and kind of forgot that I hadn’t cooked it yet. I also forgot about the baby bella mushrooms I’d picked up on the same day. Good news is this recipe accommodated all of my random refrigerator holdings and turned out to be date-night delicious. Like, pretty darn amazing and super simple restaurant quality delicious.

The only chopping I did was slice the mushrooms, cut down the cod into smaller serving sizes, and halved a lemon.

Thieves: Waterless Hand Purifier + Spray

I have a love/hate relationship with the mall. I can’t be the only one?! 🙋🏻‍♀️

I love that we took the boys to meet Phillip Lindsay (Denver Broncos rookie RB) and get autographs yesterday! 😃 🤩

I hate seeing 3 boys touching everything that doesn’t break in one of the germiest places in town, then snacking while we waited in line, that I can’t follow them into the men’s room to police the hand washing, then seeing them touch their own faces, rub eyes, or noses, THEN, picture them coming towards me for a hug or to touch my face or whisper in my ear (also by pulling my face closer with those germy hands!)! 😳 😷

Diffuser Blends for Christmas | Non-Toxic Alternatives to Candles

Christmas season is upon us and I’m on a plan to try as many Christmas diffuser recipes as I can.  One for every day and one for every evening of the month!  There is just something so nostalgic about walking into a home that smells so inviting and warm and merry that you can almost taste the sugar cookies, the candy canes or the holiday punch.  You can almost feel the warm pjs and cozy blankets being wrapped around you!

Here are a few of my favorite diffuser ideas and recipes to get you started on your Christmas diffusing journey to warm up your house and welcome family & guests this holiday season.  And a few diffuser vs candles facts to ponder…

I’m sure you all have heard the hype about our long beloved candles of yesteryear being extremely toxic to our health.  Being the skeptic that I am, I did a bunch of research and found that, yep, some candles ARE indeed TOXIC to our health!  Google these words and let me know what you find: synthetic fragrance risks, paraffin wax dangers, or any combination of paraffin wax, candle wicks and synthetic fragrance dangers and let me know what you find.  It won’t be pretty.  There are some scary words being thrown around as side effects and risks associated with burning candles in your home.  A common practice for many households, including mine growing up!

Some people might say, “but I’m fine! I grew up with it and just look at me – I’m fine!” … but are we?  How many issues are we facing these days that we consider so commonplace that we have accepted them as “normal” when maybe we could better manage them if we eliminated even 1 small thing like toxic synthetic fragrances, toxic paraffin wax and toxic candle wicks from our homes?  Skin sensitivities, digestive sensitivities, lung sensitivities, head tension frequency?

Right, so get those candles out of your homes, and consider this:

Hocus Pocus Book of Spells Cookies

“Oh Booooook” !

Who doesn’t love them some Winifred Sanderson and Hocus Pocus at Halloween?! It’s a classic, for sure.  I watch it every year and it’s honestly, one of my favs.

I remember being totally freaked out by the eye ball in the Book of Spells when I was a kid.  Now, watching it as an adult, it seems so fake, but still, really cool…and creepy.  Creepy enough to turn into a Halloween treat?  Sure!

And super easy.  Like, almost, too easy.

Get a box of chocolate covered cookies. Any kind that are square or rectangular. I found peanut butter filled chocolate covered cookies and mint chocolate cookie chocolate covered cookies (think Girl Scout Thin Mint knock-off, but square!).

Add pre-made black colored frosting in a tube and a package of candy eyes and you’re ready to roll!

Put a blob of black icing on one side (right side) of the cookie, or dot on the back of the candy eye.  Overfill it a bit so that when you press down on the cookie, it oozes out and makes a black boarder.  Use the black frosting tube and draw a squiggle on the opposite side (left side).  Add some stitch marks and extra lines and BOOM, you’ve got a spell book that old Winnie herself might come after.

The lumpier and uglier the cookie, the more realistic it is that it’s a book with skin stitched together as a cover!  Ewwww, gross, right?  I bet it will taste delicious.  And it will make a great treat for Halloween parties.
